Trio Cheesecake Pots

Sa tanang buhay ko hindi pa ko nakakatikim ng cheesecake. Parang mahal kase, kaya di ko sinusubukan. Isa pang dahilan ay medyo hindi active ang sweet tooth ko. Kaya naman ng makita ko ang resiping ito ay agad akong nanabik na matikman to.


Ingresdients:
  • 150 g graham crackers, crushed

  • 50 g butter, melted

  • 50 g walnuts, toasted and finely chopped

  • 1 tbsp caster sugar

  • 300 g nestle cottage cheese

  • 250 g mascarpone cheese

  • 150 g mild goat's cheese

  • 50 g caster sugar

  • 1 tsp vanilla extract

  • nestle all purpose cream, as needed


Sauce:
  • 50 g caster sugar

  • 50 ml water

  • 250 g mangoes, sliced and divided



Procedure:
  1. Combine the melted butter, crackers, walnuts and sugar in food processor.

  2. Whiz together and press into the bottom of serving glasses. Chill.

  3. Make sauce by gently heating together the sugar and water until syrupy, about 5 minutes.

  4. Stir in half the mangoes and cook for 2 minutes until they begin to burst.

  5. Remove from heat and leave to cool.

  6. In a bowl, whisk together the remaining ingredients except the nestle all purpose cream.

  7. Adjust consistency to a smooth mixture by adding in nestle all purpose cream.

  8. Pour a layer of the mixture into each of the serving glasses followed by the sauce.

  9. Repeat procedure until desired layers are formed.

  10. Top off with remaining mangoes

  11. Serve chilled.
