Lemon Pesto Fried Mozzarella Bites

Nagtaka ako ng mabasa ko ang recipe nito. Mozzarella, ipi-prito? Wah, baka matunaw lang 'yon at hindi mapakinabangan..e paborito ko pa naman un. Tapos na alala ko na mozzarella nga pala ang nilalagay sa pizza at masarap sya kahit tunaw. Pero pano magiging bites ang mozzarella kung tunaw na? Hayst... na praning lang pala ako (hehehehe) at ng makita ko 'to parang gusto syang kainin lahat. (^^,)


Main Ingredients:
  • 200 g fresh mozzarella, sliced

  • 2 tbsp all-purpose flour

  • 1 tsp Maggi Magic Sarap

  • 1/2 tsp cayenne pepper

  • 1 pc egg, slightly beaten

  • 8 tbsp breadcrumbs

  • oil, for frying


Lemon Pesto Ingredients:
  • 1 handful basil leaves, washed

  • 1 clove garlic, peeled

  • 3 tbsp almonds, roasted

  • 3 tbsp parmesan cheese, grated

  • olive oil, as needed

  • 1 pc lemon

  • Maggie Magic Sarap, to taste



Procedure:
  1. Slice mozzarella cheese into 8 thick slices

  2. Combine flour maggi magic sarap and cayenne pepper in a wide plate.

  3. Coat each slice with the seasoned flour then dip each in egg.

  4. Lastly, coat each piece with breadcrumbs.

  5. Heat oil in a pan for frying.

  6. Gently place the breaded mozzarella slices. Do not overcrowd the pan.

  7. Fry each side until golden brown.

  8. Drain on paper towels and set aside.

  9. To make lemon pesto, place the basil leaves and garlic gloves in a mortar and pound them until leaves are bruised and garlic is crushed.

  10. Add almonds and pound also until crushed.

  11. Add a tablespoon of Parmesan cheese and a little bit of oil. Add more Parmesan cheese and oil until you reach desired consistency.

  12. Grate some lemon zest and a squeeze of lemon juice.

  13. Season with maggi magic sarap. Stir well and set aside.

  14. This may be served by placing on top of a Crostini or French bread then drizzled with some lemon pesto.
