Banana Spanish Bread Spanakopita
Ingredients:
3 pcs Cardava bananas (saging na saba) diced
3 tbsp margarine
1 pc whole star anise
1/2 c Nestle Cottage Cheese
1/4 c sugar
2 pcs Spanish bread, torn into 1-inch/piece
8 pcs spring roll wrapper
2 c vegetable oil, for frying
Procedure:
1. Saute cardava bananas in margarine until sides turn light brown in color.
2. Add sugar and star anise & continue cooking until bananas are slightly tender.
3. Mix Spanish bread ans Nestle cottage cheese off heat and set aside to cool.
4. Put generous amount of the banana-cottage mixture in the center of a spring roll wrapper.
5. Take bottom of wrapper and roll tightly until middle of wrapper.
6. Fold in sides of wrapper towards the middle and continue to roll tightly leaving 1/2 inch of wrapper's top.
7. Dab top with water and press slightly to completely seal roll.
8. Arrange prepared rolls in a single layer with seam side down and keep covered until ready to fry.
9. Gently side rolls in hot oil, turning occasionally, until golden brown and crisp on all sides.
10.Remove from heat and drain on paper towels.
