Chicken and Mushrooms

Another Imbento Recipe: Chicken and Mushrooms
Makes 6 - 8 servings
Start to Finish: 30 mins

Ingredients:
  • Chicken wings, cut into halves 
  • 1 large onion, cut into thin wedges 
  • 2 cloves garlic, minced 
  • 5 fresh tomatoes 
  • 1/2 teaspoon ground black pepper 
  • 1/4 teaspoon salt 
  • 1 cup mushrooms 
  • 2 pcs dried laurel leaves 

Procedure:
  1. In a pan cook chicken, laurel leaves, onion and garlic in hot oil over medium-high heat for 5 to 7 minutes or until chicken is no longer pink, stirring occasionally. Meanwhile, place have of tomatoes in a blender or food processor. Cover and blend or process until smooth. Snip the remaining tomatoes into bite-size pieces. 
  2. Stir pureed tomatoes, tomato pieces in puree, pepper and salt into chicken mixture. Bring to boil, reduce heat. Boil gently, uncover for 2 minutes.Stir in mushrooms; heat through. 
  3. Serve hot.
